It’s healthy, it’s tasty and it’s easy to prepare. Oh, and it also makes you look like a complete domestic god / goddess with relatively little effort. Laden with superfoods, this pomegranate salad recipe ticks all the boxes!
Once upon a blue moon, Tribe attended a cookery class that focused on the nourishing and healing qualities of so-called superfoods and how we can incorporate a little more goodness into our lives through our diet.
Hosted by nutritionist Libby Limon, we learned how to put together this gorgeous pomegranate salad laden with antioxidants and vitamins. It tastes just as amazing as it looks and is surprisingly easy to whip up, so we recommend you add it to your repertoire!
Pomegranate Jewelled Feta Superfood Salad
Serves 2-3
You need:
100g Asparagus tips
100g Sprouting broccoli
100g Sugar snap peas
250g Pre-made red and white quinoa
The juice from half a lemon
10g fresh mint leaves
10g Flat leaf parsley
A pinch of Himalayan pink salt
Black pepper
1tbsp Avocado Oil
1/2 Avocado
100g Feta cheese
1/2 Fresh pomegranate seeds
Method:
1. Prepare the asparagus tips and broccoli by cutting off the woody ends and slicing into halves. Steam the asparagus, broccoli and sugar snap peas for two minutes. Once steamed, refresh the vegetables by immersing them in a bowl of iced water.
2. In a bowl, combine the quinoa, lemon juice, avocado oil, seasoning and herbs before stirring in the cooked vegetables.
3. Chop the avocado into pieces and sprinkle over the top, followed by the feta cheese and finally the pomegranate seeds. Serve on its own as a vegetarian dish, or with chicken or fish as a side.
