Show us a person who doesn’t love pizza and we’ll show you a liar!
While the cheese-laden, meat-tastic greasy treat isn’t the healthiest of meals, we just can’t resist the juicy Italian fare at times.
Luckily foodie, nutritional advisor and certified holistic lifestyle coach Katherine Whale has come up with a lighter version of our guilty pizza pleasure.
Having had the pleasure of being fed by Kate for a whole week when we attended Bootcamp in Ibiza last November (another story for another day), we can vouch that her dishes are tasty and nourishing in equal measures.

You need:
400g of chickpeas
50g sunflower seeds
50g sesame seeds
50g flaxseeds
2 garlic cloves
2 tbsp tahini paste
2 tbsp chickpea flower
1 egg
Hot water
A pinch of sea salt and cracked black pepper
A pinch of red chilli flakes
Method:
Heat the oven to 170 degrees. Blend all the dry ingredients thoroughly before adding the egg, tahini, garlic and hot water until the mix forms into a thick batter.
Line a baking tray with baking paper and spread the dough into a 1-2cm thick layer. Bake for 20 to 30 minutes until its cooked throughout, leave to cool and add your toppings of choice.
Put the pizza back into the oven for another 10 minutes to heat up and melt toppings.
Toppings recommended by Kate:
Buffalo tomato, feta or goats cheese, avocado, basil, red onion, smoked salmon, anchovies, capers and olives.
